This matcha is produced from tencha leaves, which are gently steamed and dried without rolling before being stone-ground into a fine, vibrant green powder. Prior to harvest, the tea plants are shaded for approximately four weeks, a traditional technique that enhances the rich umami flavor, natural sweetness, and the distinctive bright green color of premium matcha.
The tea used for this matcha is grown in Kawane, located in central Shizuoka Prefecture, a mountainous region within the Oi River basin known as one of Japan’s most respected green tea producing areas.
The tea fields are located at an elevation of approximately 600 meters above sea level, where fresh mountain water, well-drained soil, and balanced sunlight create ideal growing conditions. The natural temperature differences between day and night contribute to the balanced flavor and refreshing aroma of this high-quality matcha.
The traditional tea cultivation system of this region is recognized as part of the Globally Important Agricultural Heritage Systems (GIAHS) by the Food and Agriculture Organization of the United Nations (FAO), preserving Japan’s traditional green tea culture for future generations.
